Add 1-2 tablespoons (10-20g) per 200g of flour to improve dough elasticity and rise; use in bread, pizza dough, pasta and noodles for extra chew. To make seitan, knead with 120-150ml of water or stock until elastic, then simmer or bake. Not suitable for those with gluten intolerance.
