Yes, you can wait until January, cancel Duo, and then redeem the gift card—as long as you redeem it within 12 months of purchase.
While on Duo, you cannot apply the gift card.
After redeeming, you’ll be on Premium Individual for 12 months.

This is actually slightly cheaper for the full 12 months usage doing it this way as it is a slight discount on paying the standard monthly Spotify price every month.
