It channels the oils away and adds those sear lines we all love. Made from cast iron with a tough enamel coating free from lead and cadmium. Great griddle pan. Been looking for one for ages that has a flat bottom so is able to be used on an induction hob. Worked great.

Disappointing
I had this just before Christmas, always wanted one. It’s one of the most disappointing items I’ve ever bought. It’s non stick and even with a smear of oil it still sticks and this was from making chicken skewers. It ruined the food

It’s enamel coated, NOT non-stick coating. Pre-heating with oil should reduce food sticking to the pan.

The pan is incredible difficult to clean no matter how many days you soak. After first use the top layer came off before even attempt to wash.
