After checking with our supplier, they have advised Beurer PS160 XXL Acrylic Digital Bathroom Scales - White :
Kindly note that our scales are calibrated at the factory. We can offer instructions of how best to use the device which would be as follow:
Please can you ensure the device is on a solid, hard surface and is not on carpeted flooring when you are weighing yourself. Our device will not work correctly when weighing on carpet.
Stand barefoot on your scale, keeping your weight distributed evenly between both feet.
Also just in case you try to weigh yourself more than once; we would just like to bring to your attention, that if a person gets off a scale and then gets straight back on then the reading will differ. Scales work on a pressure/force which causes the internals to ‘deform’, the amount of deformation is measured with a number of sensors and that, very basically, is how they work. If in quick succession you get on and off the scale a few times them the ‘deformation’ won’t have had time to reset.
We would ask that you leave at least 10 – 15 minutes before re-weighing yourself, and when re-weighing you ensure you are replicating the same conditions then try again.

I think it's connected to calibration too. Sometimes, I just do a hard step with one foot on the scale until it shows 00.00, then step on with both feet. I assume they're recalibrating. I think I saw a video online which suggested doing this.

The supplier has advised the following for the Beurer PS160 XXL Acrylic Digital Bathroom Scales - White:
"No the scales are not light sensitive. Should there be a problem with the display, we would recommend changing the batteries in the device, as a low battery could be causing a display issue on this occasion."

Beurer PS160 XXL Acrylic Digital Bathroom Scales - White lets you choose between all Kgs, all Lbs or all Stones, not a mixture of two, so 11 Stone 4lbs would display as : 71.67 Kg or 158 Lbs or 11.28 Stones.
