The supplier has advised for the Thrustmeter T98 Ferrari 296 GTB Racing Wheel For PS5,PS4,PC: The Thrustmaster T98 Ferrari 296 GTB Wheel uses a desk clamp that fits tables up to 4.5 cm (1.8 inches) thick.
For the PJ Wood 2-Pack Folding TV Tray:
If the tabletop is 4.5 cm thick or less, the clamp will physically fit.
The bigger issue is the support bars and frame underneath. Many folding TV trays have wooden rails directly under the edge of the tabletop, which can block the wheel clamp from sliding in far enough.
The T98 wheelbase is about 25.5 cm wide × 24.5 cm deep.

This works with any game that supports Wheel support. GTA 5 doesn't officially so you may be able to map controls but in an unsupported fashion.
