We tested to connect a Nintendo Switch 2 and PS5 to a monitor (DELL P2723QE) and it worked normally, so yes it will work to connect a Nintendo Switch 2 and PS5 to a monitor.

How to use 2 Way Manual HDMI Selector - Black on my pc
To use a 2-way manual HDMI selector with your PC, follow these steps:
Connect your HDTV, LCD monitor, or digital projector to the "OUT/TV" HDMI socket on the back panel of the switch using an HDMI cable.
Connect your HD video and audio sources to the "IN 1" and "IN 2" HDMI sockets on the back panel of the switch using HDMI cables.
Switch on display and source equipment.
Press the buttons on the front panel to select the source you want to display.
