Yes, you can convert Vodafone 120GB Pay As You Go Data Only Sim Card to an eSIM, but you cannot do it straight out of the box. You must first activate the physical SIM card normally and then request a "SIM swap" to an eSIM through Vodafone.

A note that you can top up the SIM card, but as I found out the hard way, only if you know the associated mobile number for it which apparently comes in the initial pack.
If you lose access to that number you wont be able to reuse the SIM card so make a note of it if you intend to reuse the SIM!
