Unique English breakfast in a cup! Baked Egg and Beans Recipe
If you want a good hearty breakfast but are put off by the mess and washing up that comes with it, then this is the recipe for you!
Ingredients - Serves 2
- Cannellini beans
- Chopped tomatoes
- Finely chopped garlic
- Streaky bacon cut in 1cm strips
- Grated cheddar
- Cayenne pepper
- Splash of Worcestershire sauce
- A pinch of salt
- 2 eggs
Fry the bacon in a non-stick frying pan until crisp then add the beans and garlic and cook on a medium heat for 3-5 minutes.
Add the chopped tomatoes, plus half a can of water. Throw in the paprika, cayenne pepper, Worcestershire sauce and salt and give it a stir. Simmer for 20 minutes.
Meanwhile, pre-heat your oven to Gas Mark 5/190C and grease two mugs with a little butter.
Once the homemade baked beans have thickened, take them off the heat and stir in the cheddar.
Spoon the beans into the two mugs (if you have any leftover, they're great on toast for brekkie the next day) and crack an egg over the top of each of them.
Bake in the oven for 15-20 minutes then eat straight from the mug.
Alternatively, you can microwave the beany eggs on full power for 2 minutes.

Healthy Lunch or Protein-Rich Snack: Quiche in a Cup Recipe
Holly Bell from 'Recipes from a Normal Mum' and the 2011 Great British Bake Off has developed a quick, simple and tasty quiche in a cup recipe for us.
- Large egg
- Strong cheddar, grated
- Cherry tomatoes
- Salt and pepper to taste
Beat the egg and milk with a fork in a microwavable mug.
Stir in the cheese, tomatoes, mushroom, ham and bread then stir well with a spoon until everything is well covered in the egg mixture.
Add a little salt and pepper if you wish too.
Microwave immediately for about two minutes. When the egg is puffed up and the pieces of bread that are poking out the top look crispy, your quiche is ready to eat!

Perfect dinner for one: Healthy 'Bibimbap' Korean mixed rice
This recipe developed by Vicki from 'A Life of Geekery' is a tasty Korean rice dish known as 'Bibimbap' which is easy, healthy and perfect for one.
- 130g cooked rice
- Soy sauce
- Sesame oil
- Grated cheddar
- 1 egg
- Button mushrooms
- Baby courgette
- Small carrot
- Spring onion
- Gochujang (Korean chilli paste)
- Sesame seeds
In a large microwave safe mug, add the rice, water, soy sauce and sesame oil. Crack the egg over the top and seal the mug with cling film. Microwave for 2 minutes.
Use a peeler to create carrot and courgette ribbons. Chop the spring onion and mushrooms.
When the rice is cooked, stir together with the raw veggies, gochujan and sesame seeds.
Tip! You can swap the vegetables for anything you have on hand. If you prefer a runny egg yolk, as pictured, separate the yolk and add on top for the last 30 seconds of cooking.

Peanut Butter Cake in a Mug Recipe
Mug cakes are becoming the new craze in baking: in less than ten minutes you'll have a single portion of cake, and there's hardly any washing up.
Mollie Bylett has developed a delicious healthy nutty treat; a peanut butter mug cake.
- Coconut flour
- Ground almonds
- Baking powder
- Coconut sugar or normal sugar
- Raw cacao powder / cocoa
- Large egg white
- Mashed banana
- Almond milk / milk
- Peanut butter
In a bowl combine the egg white, mashed banana and almond milk.
Add in the coconut flour, ground almonds, baking powder, coconut sugar and cacao powder.
Spoon half the mixture into mug, add the peanut butter layer and then add the remaining mixture on top, flattening the top and sides evenly.
Microwave for 1 minute, leave to rest for 10 seconds, and then microwave for another 30 seconds.
Add chosen toppings to the mug or flip the mug cake onto a plate and enjoy warm.
Recommended toppings: Greek yogurt, coconut ice cream, fresh berries or honey

British Summertime Strawberries & Cream Mug Cake Recipe
Amanda Dales from 'Rhyme and Ribbons' has developed a truly British summery recipe: strawberries and cream mug cake. Check out her delicious recipe below.
- One egg
- Pot of strawberry yogurt, with chunks
- Baking powder
- Vanilla extract
Preheat your oven to 350F (180C).
In a small bowl, combine your yogurt, egg and vanilla.
Sift in all your dry ingredients and stir until your batter is smooth.
Pour your batter into a mug and place in the oven on a baking sheet for 15-20 minutes or until the top is golden and a toothpick comes out of the centre clean.
Set your mug cake aside to cool, then serve topped with sliced strawberries and a dollop of whipped cream. Enjoy!
