what you need (serves 2)

  • Cannellini beans
  • Chopped tomatoes
  • Finely chopped garlic
  • Streaky bacon cut in 1cm strips
  • Grated cheddar
  • Paprika
  • Cayenne pepper
  • Splash of Worcestershire sauce
  • A pinch of salt
  • 2 eggs

  1.   Fry the bacon in a non-stick frying pan until crisp then add the beans and garlic and cook on a medium heat for 3-5 minutes.
  2.   Add the chopped tomatoes, plus half a can of water. Throw in the paprika, cayenne pepper, Worcestershire sauce and salt and give it a stir. Simmer for 20 minutes.
  3.   Meanwhile, pre-heat your oven to Gas Mark 5/190°C and grease two mugs with a little butter.
  4.   Once the homemade baked beans have thickened, take them off the heat and stir in the cheddar.
  5.   Spoon the beans into the two mugs (if you have any leftover, they're great on toast for brekkie the next day) and crack an egg over the top of each of them.
  6.   Bake in the oven for 15-20 minutes then eat straight from the mug.
  7.   Alternatively, you can microwave the beany eggs on full power for 2 minutes.
