I use mine with all my Apple devices and they connect to two at a time. Changing between my iPad, Macbook, iPod or iPhone is fairly straightforward although they do seem to favour connecting to the iPhone.
They connect via Bluetooth so as long as the device is compatible then I can't see it being a problem.

Yes they do
Over the ears really caccoon you in the sound. The Bose's noise cancelling on its highest setting can feel a little nauseous and I only have it on that setting when the background noise is high. I listen to them on low. Excellent headphones you can wear all day. Class.

The sound quality has not changed between the two models. The differences are that QC35 II has a dedicated Google Assistant button and control over ANC level using the Action Button.
