i bought this for our pub but we have the occasional problem with the joystick as it gets stiff after 3 months or so

It is built on a simple Unix based OS. But take note; this is NOT a Raspberry Pi in a cabinet. There is currently no hacks for adding more games, and it is very stable as is. Putting a flavour of Raspberry Pi OS on it like Raspbian for instance will cause it issues, as it doesn't have the same hardware capabilities. (Lower CPU and HDD space, with no SD slot). Oh and Android wouldn't work either. Best to leave it as is.

This isn't really what you think it is, yes it plays arcade games, but essentially it's a monitor hooked up to a NES type multigame system, so doesn't use an OS at all.
Too be honest this does no more than those cheap NES knockoff multigame plug & play TV games that were popular about 10 years ago, even worse of course they aren't actually the original arcade games, but rather versions of them that were made for the NES.That in mind the best game this will play is Super Mario Bros, but anything else won't be quite as you rememember it.
Actually, Nintendo produced a system a bit like this for the arcades, called the Playchoice 10, which basically allowed you to play 1 of 10 NES games, on a time per coin basis.

Having looked into your question regarding the Arcade Mania 75 in 1 Freestanding Game Machine, I can confirm that it does not run on an operating system. It is a dedicated games system.
