Meringues.

Become the meringue master

Follow this easy recipe to perfect your meringue making skills. Once you’ve nailed it, take your pick of toppings  or use them as decoration on a showstopper cake.

What you'll need:

  • 6 medium free-range eggs, whites only
  • 330g caster sugar
  • 1 tbsp cocoa powder
  • 2 tbsp raspberry conserve

Prep time: 15 mins

Cooking time: 2 hours

Serves: 6

    Method:

    1. Preheat your oven to 190°C, fan 90°C or gas ¼ and line two baking trays with greaseproof paper.

    2. In a clean, grease-free bowl, whisk the egg whites until they form stiff peaks. Slowly add the caster sugar, tablespoon at a time, whisking until combined.

    3. Divide the mixture between 2 bowls, then gently fold the cocoa powder into one and jam into the other.

    4. Drop large dollops of the mixtures onto your baking trays. You should get 3 meringues from each of the mixtures.

    5. Bake for 2 hours, then turn the oven off and leave in the warm for a further hour before removing. Allow to cool before serving.
