Bake of the week
Become the meringue master
Follow this easy recipe to perfect your meringue making skills. Once you’ve nailed it, take your pick of toppings or use them as decoration on a showstopper cake.
What you'll need:
- 6 medium free-range eggs, whites only
- 330g caster sugar
- 1 tbsp cocoa powder
- 2 tbsp raspberry conserve
Prep time: 15 mins
Cooking time: 2 hours
Preheat your oven to 190°C, fan 90°C or gas ¼ and line two baking trays with greaseproof paper.
In a clean, grease-free bowl, whisk the egg whites until they form stiff peaks. Slowly add the caster sugar, tablespoon at a time, whisking until combined.
Divide the mixture between 2 bowls, then gently fold the cocoa powder into one and jam into the other.
Drop large dollops of the mixtures onto your baking trays. You should get 3 meringues from each of the mixtures.
Bake for 2 hours, then turn the oven off and leave in the warm for a further hour before removing. Allow to cool before serving.
