Spread a layer of apricot jam over your cake, making sure to cover the whole surface. Lightly dust your surface with icing sugar and roll out the marzipan into a circle shape big enough to cover the top and sides of the cake.
Place the marzipan on top of the cake and carefully pat down. Trim off any extra marzipan with a knife. Leave in a cool, dry place for around a week.
Top layer - royal icing
Lightly dust your surface with icing sugar and roll out the icing into a circle shape to cover the cake. Brush egg white over the marzipan and carefully positon the icing onto the cake. Pat and smooth again and trim off the excess.
Store in an airtight container.
